Dumplings 🥟 for dins. A tale of two families. I was taught to make momos <L> (Tibetan side of fam) and pleated dumplings <R> (Cantonese side of fam) Im going to make them into “War Tip” which is Cantonese for panfried dumplings like Gyoza #Cantonese #Tibetan #food

@yetiinabox These are not the best wrappers for momos though. I like to have thicker skins so there is a pronounced dough knot at the top.

We make our own wrapper dough, and actually fold them up a bit differently. We do use that style, but also a round one that doesn't have the 'dimple' on top, and then a crescent-shaped one too.

And yes, it's definitely a collective project. I am clumsy-fingered and cannot be trusted with anything other than making dough and rolling it out, but the children are all remarkably good at folding up the momos now. Unlike mine, which often pop in the steamer.

A 𑐴𑐶𑐟𑐶 (hiti) is an ancient Newah urban water feature: a stepped, sunken courtyard with waterspouts and a central pool. These are fed through a remarkable network of pipes, reservoirs, and irrigation systems drawing water from mountain springs dozens of kilometres away. Every day, hundreds of people from the neighbourhood come to draw water, bathe, and exchange news. They are a unique and precious feature of Newa urban architecture through which neighbourhoods are created.
